I was extremely skeptical of this diet until my reproductive endocrinologist suggested I do it since nothing else had worked to allow me to ovulate in 9 years. I started ovulating immediately after doing the 40 days of Phase 2 and got pregnant within 2 months! Not to mention I lost tons of weight too! This diet also allowed me to lose the baby weight.

HCG DIET Phase 2 (P2) RECIPE #17: FRUIT LEATHER

You may not have a dehydrator so here's a way to make your own fruit leather or roll ups in your oven.


Fruit Leather

4 C strawberries or peeled apples
(pictured is mixed berries)
2 T or more powdered stevia
1/4 C fresh lemon juice

Preheat oven 170-200 degrees. Cover baking sheet with plastic wrap.
Combine all ingredients in a blender and puree until smooth. Run through a sieve, if desired, for a smoother texture (to remove seeds, etc. - I did not.)

Spread evenly on pan. 


Place the pan on the top rack of the oven.


Bake for at least 4 hours leaving door partway open, if desired. 


You'll know it's dry when it's no longer tacky and you can tear it.

Either place the whole pan on a cooling rack, remove the plastic wrap from the pan and cool on the cooling rack or only remove the fruit leather and place on a cooling rack until completely cooled.




Cut into pieces.


To store: store in an airtight container or Ziploc.

HCG DIET Phase 3 (P3) RECIPE #36: substitute CUCUMBER slices for tortilla or corn chips

I love to snack on chips as much as anyone else but since you can't in P2 or P3, I made homemade guacamole or salsa and used fresh cucumber slices instead of tortilla/corn chips. Yes, I know it's not the same, but at least I can have as much as I want and not feel guilty about it. Besides, I really like the crunch of the cucumbers and giving myself and my family a better option to snack on. My favorite is eating cucumber slices with guacamole; it's fresh and cool during the summer.

HCG DIET Phase 3 (P3) RECIPE #35: BLT SALAD & HOMEMADE DRESSING

BLT SALAD &  HOMEMADE DRESSING
serves 2

salad greens
1 C sprouts
1 diced tomato
1/2 cucumber, sliced
4 slices cooked NSA bacon
1/2 C shredded cheddar cheese

Layer ingredients in a large bowl.

To make the dressing, whisk together:
1/3 C NSA mayonnaise
1/4 C milk
1 T mustard
1/2 t garlic powder
pepper to taste

Drizzle over salad or serve it on the side and serve immediately.


TIP: If you have left over dressing, sub in a couple of tablespoons of dressing for the mayo & mustard in your tuna or egg salad the next day. 

HCG DIET Phase 3 (P3) RECIPE #34: NO TORTILLA ENCHILADAS



NO TORTILLA ENCHILADAS
serves 2-3

2 - 3 C cooked lean ground beef or bison
1 C shredded cheddar cheese
6 - 8 leaves of cabbage
1/4 - 1/2 C sliced olives
2-3 C tomato or pasta sauce
seasoning to taste
salsa
sour cream

Brown meat then mix in olives, cheese & seasoning. Set aside. 


Pull off cabbage leaves and place in microwave safe bowl. Pour in 1/2 C water and microwave for 3-4 minutes until pliable.

Pour 1/2 sauce into greased baking dish. 

Make enchiladas by putting meat mixture into each leaf and rolling like a burrito. Place in pan close to one another. 



Pour rest of sauce over enchiladas.


Cover with foil.

Bake in preheated oven at 350 degrees for 30-45 minutes. 

Drizzle with sour cream, salsa, cheese or other.

HCG DIET Phase 3 (P3) RECIPE #33: CREAM CHEESE MUFFINS

CREAM CHEESE MUFFINS
makes 12 at 52 calories each

2 (8oz) low fat cream cheese
1/2 C stevia
2 eggs
1/2 t vanilla
cinnamon (optional)

Microwave cheese for 40 seconds. Add all ingredients & mix on low until smooth.
Line muffin tin. Bake in preheated oven at 350 degrees for 20 minutes then turn oven off, open oven door and let sit for 1 hour. Refrigerate to store.

CHOCOLATE DELIGHT

Fluff with a fork: 1 C unsweetened cocoa, 1 C coconut oil, melted & powdered stevia to taste.

SNICKERDOODLES
20 servings

1/2 C butter
1 1/2 C almond flour
1 T stevia
1 egg
1/2 t vanilla
1/4 t baking soda
1/4 t cream of tartar

Mix althogether then cover and refrigerate for 1 hour.
Roll into balls then in a mixture of:

2 t stevia
1 t cinnamon

Bake in preheated oven at 350 degrees for 12-15 minutes.

1/4 C coconut oil, melted
1 C almond flour
1 C vanilla whey protein
1 egg
1 t vanilla
1/8 t sea salt
1/4 C stevia
1/2 t baking powder

Mix and press into pie plate.
Bake in preheated oven at 425 degrees for 15 minutes.

HCG DIET Phase 3 (P3) RECIPE #29: ALFREDO SAUCE

ALFREDO SAUCE

In a sauce pan, whisk 8 oz cream cheese and 2 t garlic powder.
Adding small amounts at a time, whisk in 2 C milk. 
Stir in 6 oz grated Parmesan cheese and pepper to taste. 
Add bacon bits if desired.

HCG DIET Phase 3 (P3) RECIPE #28: ALMOND SUGAR COOKIES

ALMOND SUGAR COOKIES

Mix:
1 1/4 C almond flour
1 t liquid stevia
1/4 C room temp butter
1 egg
1 t vanilla

Form into balls and place on a greased cookie sheet. Flatten slightly with a fork. Sprinkle powdered stevia on top. Bake in a preheated oven of 350 degrees for 8 minutes. 

HCG DIET Phase 3 (P3) RECIPE #27: NO BAKE LEMON CHEESECAKE

NO BAKE LEMON CHEESECAKE

Sprinkle 1 packet unflavored gelatin onto 1/2 C fresh lemon juice (juice of 3 large lemons). Let sit for 5 minutes. Heat the mixture until warm to touch.

Beat 24 oz soft cream cheese, 2 1/2 C powdered stevia & 1 t vanilla until smooth. 

Beat in gelatin mixture to the cream cheese mixture. Mix in 5 t lemon zest and 1 or more drops of yellow food coloring. Beat until fluffy.

Gently fold in 1 C whipped heavy cream.

Pour in pie plate and chill for 5-6 hours.

HCG DIET Phase 3 (P3) RECIPE #26: ZUCCHINI CHIPS

ZUCCHINI CHIPS

1 large zucchini or cauliflower, shredded
2 eggs
2 C shredded cheese

Mix all ingredients well and make 6-8" circles on a seasoned pizza stone or greased baking sheet.
Bake in a preheated oven at 450 degrees for 12 minutes.
Loosen and flip. Bake another 5 minutes.
Using a pizza cutter, cut into triangles.
Let cool for 6-8 hours.
Use within 1 week.

HCG DIET Phase 3 (P3) RECIPE #25: MOCK TACO SHELLS - cheese

MOCK TACO SHELLS

Place a thin layer of shredded cheese on parchment paper.
Microwave 1 minute at a time until soft and melted.
Remove immediately and bend into a taco shape. 
Cool by holding it or in a taco holder.

1 C skim milk
1 C ice
1 t vanilla
1/2 C PB
2 T powdered stevia

Blend well in blender.

HCG DIET Phase 3 (P3) RECIPE #23: FRIED APPLES

FRIED APPLES

Melt 1 T butter over medium heat.
Stir in 1 T powdered stevia & 1 1/2 t lemon juice.
Then add 1 medium tart apple that's been cored and cut into rings or slices.
Reduce heat and cover. Simmer 10-15 minutes, turning frequently.

ALMOND JOY BITES
make 1 dozen

1/4 C Walden Farms Chocolate Syrup
1/4 C Walden Farms Chocolate Dip
1/8 C Walden Farms Caramel Dip
1/2 C unsweetened coconut
12 almonds

Mix altogether. Add more coconut if desired. Drop on foil and put an almond in the middle of each one. Put in freezer for half hour. Put in Ziploc to store in the freezer.

HCG DIET Phase 3 (P3) RECIPE #21: Eggplant Pizza

I made these one night at my parent's house and I was shocked at how much my macho brother loved them. Not only did he tell me that night how good they were but when I saw him a couple of days later, he commented on them again! What a compliment!


EGGPLANT PIZZAS

eggplant, peeled & cut into approx 3/8" slices
olive oil
tomato sauce
mozzarella cheese
Toppings: pepperoni, olives, onions, fresh basil, etc.

Layer ingredients as you desire onto eggplant slices. Preheat oven 400 degrees and bake 20-25 min.




HCG DIET Phase 3 (P3) RECIPE #20: FOUR CHEESE ROASTED EGGPLANT CASSEROLE

FOUR CHEESE ROASTED EGGPLANT CASSEROLE

6 servings @ approx 210 calories each

1 eggplant, peeled, 1/4" slices
Brush on 1/4 C olive oil onto slices then lightly salt.
Bake at 425 degrees for 8-10 minutes.
Then remove and cover with foil. 

Combine:
1/3 C ricotta
1/3 C cottage cheese
1/3 C Parmesan
1T chives

Place 1/2 C tomato sauce in greased baking pan.
Layer with eggplant and cheese mixture & another 1/2 C tomato sauce.
Top with 1 C mozzarella.

Bake 425 degrees for 15 minutes.



HCG DIET Phase 3 (P3) RECIPE #19: PEANUT BUTTER COOKIES

PEANUT BUTTER COOKIES
makes 6


1 C PB
1 C powdered stevia
1 egg

Preheat oven to 350 degrees.

Combine ingredients & drop on cookie sheet.

Bake 8-10 minutes.

HCG DIET Phase 3 (P3) RECIPE #18: JALAPENO POPPERS

JALAPENO POPPERS
makes 6

6 jalapenos, seeded
6 slices NSA bacon
(No Sugar Added)
6 oz shredded pepper jack cheese
6 oz cream cheese

Wash, dry and seed the jalapenos.


Mix the cheese together and fill the jalapenos.

Wrap with a slice of bacon and skewer it all with a toothpick to hold in place. The only NSA bacon I could find was Gwaltney.




Bake in a preheated oven 450 degrees for 10-15 minutes or until bacon is cooked through and cheese is starting to melt out.

HCG DIET Phase 3 (P3) RECIPE #17: GRANITA HEIRLOOM TOMATO SALAD

GRANITA HEIRLOOM TOMATO SALAD
serves 6

1 T red wine vinegar
2 t olive oil
1/4 t salt
8 oz peeled & seeded heirloom tomatoes
4 assorted heirloom tomatoes, cut 1/4 inch thick slices
1/2 t pepper
1/4 salt
basil leaves (optional)

To make the granita:
Blend vinegar, oil, salt & 8oz tomatoes until smooth. Place in 8" baking dish, cover and freeze.
When frozen, remove and scrape with a fork.

Lay slices of tomatoes on serving platter and top with granita.
Sprinkle with basil leaves if desired.

HCG DIET Phase 3 (P3) RECIPE #16: KALE CHIPS

KALE CHIPS
approx 175 calories for the WHOLE thing!

1 bunch kale
1 T olive oil
1 t sea salt

Preheat oven to 350 degrees.
Line a baking sheet with parchment paper or use your seasoned pizza stone.

Remove leave from thick stems using clean kitchen scissors; then tear into bit size pieces.
Wash well and dry completely. If you don't have a salad spinner, like I don't, lay out clean kitchen towels and let them dry on there for a couple of hours. 

Place kale pieces in a bowl and drizzle with olive oil. Fold well to coat. 
In batches, arrange kale pieces on the pizza stone and sprinkle with salt.

Bake 10-15 minutes until edges are brown but not burnt. 

HCG DIET Phase 3 (P3) RECIPE #15: SWEDISH NUTS

SWEDISH NUTS

makes approx 2 Cups
404 calories per 1/4 C - approx 12-13 pieces

Preheat oven to 325 degrees.

Beat 2 egg whites until soft peaks form. 

Add in 1 C powdered stevia, 1 pinch salt & 1/2 t vanilla and beat until stiff peaks form.

Fold in 1 lb pecan halves.

Place 1/2 C butter in a 9x13 pan and put in oven to melt. 

Evenly spread nuts over butter and bake for 30 minutes, stirring and turning every 8 minutes.

Place on foil and cool.

Store in airtight container for up to 3 weeks.


HCG DIET Phase 3 (P3) RECIPE #14: CHOCOLATE CHIP & COCONUT COOKIES

CHOCOLATE CHIP & COCONUT COOKIES
makes 20 (1/4 C) cookies
approx 164 calories per cookie

Mix:
1/2 C coconut oil, melted
1 C powdered stevia
5 (1 1/4 C) egg beaters
1/2 t vanilla
1/8 t salt

Stir in:
1 1/2 C non sweetened coconut
3/4 C unsweetened chocolate chips
3/4 C nuts
1 C coconut flour

Drop or roll into balls and place on pizza stone or cookie sheet.
Note: They will not spread.
Bake in preheated oven 375 degrees for 14-15 minutes.

HCG DIET Phase 3 (P3) RECIPE #13: CHEESECAKE

CHEESECAKE
servings 8
95 calories each

2 eggs
2 t vanilla
 1 1/2 C plain Greek yogurt
1/4 C stevia
16 oz fat free cream cheese, softened
2 T melted butter

Blend eggs, vanilla, yogurt and stevia. Slowing incorporate cream cheese and butter. Mix until well blended. 

Put into a greased 10" spring form pan and bake in preheated oven at 350 degrees for 35 - 40 minutes. 

Refrigerate to thicken.

Add whatever topping you want. 

For a snack, I had a slice drizzled with Walden Farm's 0 calorie chocolate syrup on top. 
For tonight, I'll make a strawberry compote made with stevia to top my piece with. 

Suggestions: whipped cream, nuts, chocolate, fruit compotes, etc.


HCG DIET Phase 3 (P3) RECIPE #12: CAULIFLOWER CRUST PIZZA


CAULIFLOWER CRUST PIZZA
makes 1 large pizza (4 servings)

3-4 cooked cauliflower, mashed or pureed
2 eggs
2 C low fat mozzarella
2 t oregano
2 t parsley
tomato or Alfredo sauce
toppings
mozzarella

Combine pureed cauliflower, eggs, mozzarella, oregano & parsley well. Using a spatula, spread evenly onto a pizza stone or greased baking sheet to the edges. If you make the crust thicker, you'll be able to hold it like a piece of pizza. The round individual pizzas are easy to hold too.


Bake in a preheated oven of 450 degrees for 15-20 minutes.


Remove and spread sauce on then toppings and mozzarella. 

Place under broiler until cheese is melted.


HCG DIET Phase 3 (P3) RECIPE #11: FLIP OVER EGGS

FLIP OVER EGGS

1 t butter
1 egg
1 T milk
1 slice cheddar

Melt butter in skillet.

Whisk egg & milk then cook. Flip once.

Add cheese to top for 10 seconds or until melted. 

Flip half the egg over onto itself.

HCG DIET Phase 3 (P3) RECIPE #10: PEANUT BUTTER DIP with APPLES

PEANUT BUTTER DIP with APPLES

Mix equal parts of Greek yogurt & peanut butter then add stevia to taste. Serve with apple slices.

This made a great breakfast!

HCG DIET Phase 3 (P3) RECIPE #9: ALMOND CRUSTED TILAPIA & CAULIFLOWER PUREE

I seriously could eat this every day for the rest of my life. Delish!

ALMOND CRUSTED TILAPIA
servings 8

2 eggs
1 t lemon pepper
1 t garlic pepper
1 C almond flour/meal (also called ground almonds)
1 C freshly grated Parmesan cheese
8 (6 oz) tilapia fillets
1/4 C flour
6 T butter
salt to taste
8 lemon wedges

Beat eggs with lemon pepper and garlic pepper and set aside. 
Stir together ground almonds with Parmesan cheese and set aside. 
Dust fish with almond flour and shake off excess.
Dip fish into egg then press into the almond mixture.

Melt butter in a large skillet over medium high heat. 
Cook fish until golden on both sides about 2-3 minutes per side.

Serve with lemon wedges.


CAULIFLOWER PUREE
serves 1

Place a 12 oz frozen bag of cauliflower in a microwave safe bowl. Put 2 T water in. Cover and cook on high for 6 minutes in the microwave.

Take out and use a masher or hand blender or blender to puree cauliflower. Add 1 T butter if desired along with 2 T skim milk. Add salt and pepper to taste & top with cheese.



HCG DIET Phase 3 (P3) RECIPE #8: CHOCOLATE PEANUT BUTTER PROTEIN SHAKE

I was in a hurry so I made up this shake to sub my lunch. 

CHOCOLATE PEANUT BUTTER PROTEIN SHAKE
serves 1 glass

2 T unsweetened cocoa powder
1 C skim milk
2 T NSA peanut butter
1 rounded scoop 365 Whey Protein Powder - Natural vanilla flavor
4 or more cubes of ice

Blend altogether in a blender.
Serve immediately.

HCG DIET Phase 3 (P3) RECIPE #6 & #7: SAUTEED FROG LEGS & STEAMED ARTICHOKES WITH TARRAGON MAYONNAISE

My daddy used to go frog hunting in West Texas when I was growing up. He'd always come home and share his catch with us. My husband has never had them so I thought I'd make it for him. Unlike my daddy, my hunting consisted of calling stores to see who carried them. 

SAUTEED FROG LEGS
serves 4

3 T soy sauce
3 T Global Sweet Xylitol honey OR 3 T powdered stevia
1 minced clove garlic
1 pinch ground ginger
1 lb frog legs
salt & pepper
3 T Expert Foods ThickenThin not/Starch or coconut flour
1 T oil
1 T thinly sliced green onions

Stir soy sauce, honey, garlic & ginger together. Toss the frog legs in to coat & set aside for 1 hour to marinate in the refrigerator.

Drain well but reserve marinade. Season legs with salt and pepper. Coat well with cornstarch. 

Heat oil in skillet on medium high heat. Cook legs about 4-5 minutes per side. While they cook, bring marinade to a simmer in saucepan and simmer for 3 minutes. 

Transfer legs to a serving dish after they've drained on a paper towel. Pour sauce over them and sprinkle with onions.





STEAMED ARTICHOKES 
WITH TARRAGON MAYONNAISE
serves 4

2 lemons & zest of 1
4 artichokes
2 T water
1 C NSA mayonnaise
3/4 t chopped fresh tarragon
2 dashes hot sauce (Tabasco)
sea salt and pepper to taste

Squeeze lemon juice into a large bowl of cold water. 

Trim stem of 1 artichoke flush with bottom. Snap off outer leaves. Using kitchen scissors, cut off tips of remaining leaves. Place in lemon water. Repeat. 

Drain artichokes and place in a pot in a single snug layer (batches if necessary). Add 1/4 C water. Bring to simmer, cover, steam until tender, about 35 minutes. Remove from pot and let cool. Cover and refrigerate for up to 2 hours.

Zest and juice remaining lemon. Whisk zest, 2 T juice, mayonnaise, tarragon, hot sauce, salt and pepper. Serve with artichokes.




HCG DIET Phase 3 (P3) RECIPE #5: HOT CHOCOLATE PUDDING

HOT CHOCOLATE PUDDING
serves 6

10 oz unsweetened chocolate chips
6 T unsalted butter, cut in cubes
4 large eggs or 1 C egg beaters
1/4 C powdered stevia
whipped cream sweetened with stevia

Position rack in middle of the oven. Preheat oven to 350 degrees.

Arrange 6 oven proof 6 oz coffee mugs in a baking or roasting pan. 

Melt chocolate & butter in bowl, set in double broiler or metal bowl over simmering water. Whisk occasionally until smooth. Remove from heat.

In another double broiler or metal bowl, stir eggs & sugar together until warm to touch. 

With electric beaters, beat egg mixture 3-5 minutes until light and fluffy.

With a spatula, fold eggs into chocolate until light and smooth. Spoon batter into cups. 

Add enough VERY hot water to baking pan to come half way up sides of cups. 

Bake 20 - 25 minutes or until tops of pudding are no longer shiny. 

Serve warm, topped with a dollop of whipped cream.

HCG DIET Phase 3 (P3) RECIPE #4: Oh, an egg! - BACON WRAPPED BAKED EGGS

OH, AN EGG!
Serves 4

4 slices NSA bacon
1 T butter
4 eggs
shredded cheese

Preheat oven to 350 degrees. Place bacon in a deep skillet on medium high heat until evenly brown but still flexible. Wrap bacon slice around the inside of a muffin cup. Put butter in hot skillet to melt. Place a teaspoon of butter/bacon grease mixture in the bottom of each muffin cup. Drop in an egg. Bake in oven for 15 minutes. Place a sprinkling of cheese on top of each one. Bake another 3-5 minutes until cheese is melted and egg is cooked.
